Happy Mexico’s Independence, today marks the 201 aniversary for the independance of Mexico. As per tradition today is the day of good food and drink, and a day of celebration. Right now getting ready to celebrate and enjoy the traditional Pozole as well as some good Tequila.

Pozole is made from nixtamalized cacahuazintle corn, with meat, usually pork or chicken, chili pepper, and other seasonings and garnish, accompanied with tostadas.
